Spinach Fettuccine with Bacon, Mushroom and Cheese Recipe

This creamy and flavorful spinach fettuccine with bacon, mushroom, and cheese is a delicious and simple pasta dish ideal for a quick and satisfying weeknight dinner. It's impossible to resist the combination of salty bacon, earthy mushrooms, and creamy Parmesan cheese.

  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Instructions

  • A large pot of salted water should be brought to a boil.
  • Cook until the fettuccine is al dente, about 8-10 minutes.
  • Cook the bacon in a large skillet over medium heat until crispy, about 5-7 minutes, while the pasta cooks.
  • Set aside the bacon using a slotted spoon.
  • Cook until the mushrooms are softened and lightly browned in the bacon grease, about 5-7 minutes.
  • Cook for another 1-2 minutes after adding the minced garlic and red pepper flakes.
  • Reserve 1/2 cup of the cooking water after draining the pasta.
  • Combine the cooked fettuccine with the mushrooms and bacon in a skillet.
  • To the skillet, add the reserved pasta water, grated Parmesan cheese, and butter.
  • Toss everything together until the pasta is completely coated in the creamy sauce.
  • Season to taste with salt and pepper.
  • Serve immediately, if desired garnished with additional Parmesan cheese and red pepper flakes.
