Instructions

  • Combine the ground lamb, Parmesan cheese, garlic, salt, and black pepper in a large mixing bowl.
  • In a separate bowl, combine the flour and eggs until a dough forms.
  • Knead the dough for 5 minutes on a floured surface, then cover with a damp cloth and set aside for 30 minutes.
  • Roll the dough out thinly and cut into circles with a cookie cutter or cup.
  • Fill each circle with a spoonful of the lamb mixture, then fold over and seal the edges to form a ravioli.
  • Cook the ravioli in a large pot of salted water for 5-6 minutes, or until they float to the surface.
  • Meanwhile, in a large skillet over medium heat, heat the olive oil.
  • Sauté the mushrooms for 5 minutes, or until softened.
  • Serve the cooked ravioli with the mushrooms and fresh parsley on top.
