Instructions

  • A large pot of salted water should be brought to a boil.
  • Cook the ravioli according to package directions until al dente.
  • Drain the remaining pasta water and set aside 1/2 cup.
  • Melt the butter in a large skillet over medium heat.
  • Cook until the pine nuts are lightly toasted, about 2-3 minutes.
  • Stir together the lemon juice and zest in the skillet.
  • To the skillet, add the cooked ravioli and the reserved pasta water.
  • Toss the ravioli in the lemon butter sauce to coat.
  • Season to taste with salt and pepper.
  • If desired, top with additional pine nuts and lemon zest.
